Three Exciting New Businesses Now Open in Mueller

March 18, 20268 min read

One of the things I love most about living and working in Mueller is that this neighborhood never sits still. Every few months, something new opens - something that makes you think, "Of course. This is exactly what we needed."

This time, we've got three fresh additions to the Mueller scene, and I'm genuinely excited about all of them. Whether you're a coffee lover, a creative spirit, or someone who appreciates artisan food rooted in real craft, there's something here for you. Let's dig in.

Merit Coffee - 1900 Aldrich St., Suite 100

Merit Coffee Mueller

Opened: February, 2026

If you've been watching the corner of Aldrich Street near the Thinkery, you already knew something good was coming. Merit Coffee - the beloved San Antonio–born specialty roaster - officially opened its fourth Austin location right here in Mueller on Valentine's Day 2026, and the neighborhood has been abuzz ever since.

Merit was founded in 2009 by the Ellis family and remains family-owned and operated. With 14 locations across San Antonio, Austin, and Dallas, it has become one of Texas's most trusted specialty coffee brands - not just for the quality in the cup, but for the kind of community it builds around it. Their motto says it all: "Our mission is to be the light in our communities and the bright spot in our customers' day."

The Mueller café brings that same warm, barista-led philosophy east of I-35 for the first time. The space was designed to reflect the energy and creativity of the neighborhood - familiar and fresh all at once, exactly the way Mueller likes it.

What's on the Menu

Merit's menu centers on specialty drip coffee, cold brew, and espresso-based drinks served hot or iced - including lattes, cappuccinos, and matcha lattes. Their beans are sourced directly from farms in Central and South America and Africa, then roasted in-house in San Antonio. Some current standout drinks include the cereal milk cold brew, bourbon cream cold foam latte, dulce spice latte, and the cinnamon toast crunch matcha. Pastries round out the morning lineup.

Prefer to brew at home? Merit's beans are available at H-E-B, Whole Foods, Sprouts, and Central Market.

Other Austin Locations

South Lamar, Seaholm District, and The Triangle - Mueller is their first location east of I-35.

Hours of Operation

Merit typically operates Mon–Fri 6:30 AM–7:00 PM and Sat–Sun 7:00 AM–7:00 PM (hours may vary - check their website for current Mueller location hours).

As someone who has spent years watching Aldrich Street evolve into one of Austin's most vibrant walkable districts, I can tell you: having a craft coffee roaster of Merit's caliber land right here is a big deal. Mueller has always attracted the best of Austin, and Merit fits right in.

The Little Bisque - 4646 Mueller Blvd., Suite 1050

The Little Bisque Mueller

Opened: 2025 - Now Open (Reservations Required)

Pottery and Mueller? I didn't see it coming - but now I can't imagine the neighborhood without it. The Little Bisque is a family-owned, paint-your-own-pottery studio that recently opened inside Mueller, and it is exactly the kind of local, community-minded gem that makes this neighborhood so special.

The studio was founded by Diana Brewer Zambrano, an entrepreneur whose love of ceramics started years ago when she worked at Create It Ceramics during college. That creative seed never stopped growing - and now it's bloomed into a cozy, inviting space where neighbors, families, friends, and artists of all ages can slow down, get a little colorful, and make something meaningful together.

How It Works

The Little Bisque is a true paint-your-own experience. Pottery pieces are priced from $10 to $64, with an average around $30. The price is all-inclusive - it covers your two-hour studio session, all paints, glazes, instructions, and kiln firing. Simply choose your piece when you arrive, settle in at your table, and let your creativity take over. After painting, leave your piece with the studio for firing. Your finished creation is ready for pickup 7-10 days later.

Reservations are required, and they make the experience seamless - your spot is ready when you arrive. The studio also hosts private parties, making it a standout option for birthday celebrations, date nights, or creative catch-ups.

The Little Bisque is one of those businesses that perfectly captures what makes Mueller so livable. It's not just another retail space - it's a gathering place. And in a neighborhood that has always prized community over commerce, that matters.

ThoroughFare

ThoroughFare Mueller

Soft opened on March 17th, scheduled to officially open on the 20th, but best to keep an eye on it. Sometimes things change!

From the creators of: ThoroughBread (1709 Bluebonnet Ln., South Austin)

If you've ever stood at the counter of ThoroughBread on Bluebonnet Lane and marveled at how one small bakery managed to become a full Austin institution - earning recognition as one of Food & Wine's 100 Best Bakeries in America and Texas Monthly's Best Bread in Texas - then you'll appreciate what's coming to Mueller.

ThoroughFare is the ambitious new expansion concept from ThoroughBread founders Ryan Goebel and Nick Vukmaravich. Under their parent company, Thorough Foods LLC, they've evolved beyond the original micro-bakery model into a broader culinary vision. ThoroughFare expands the craft to encompass a wider range of handcrafted foods - including pastries, artisan cheeses, smoked meats, and curated condiments - alongside the signature sourdoughs and baked goods that built their reputation.

The Mueller neighborhood is one of the first new markets for the ThoroughFare concept as the team grows their footprint across Austin and beyond. Their production hub - a 40,000-square-foot facility in Palestine, TX, housed inside the historic former Eilenberger's Bakery building - supplies their Austin locations with fresh goods delivered at scale.

What to Expect

Expect the same obsessive commitment to quality that defines ThoroughBread - organic flours, natural fermentation, slow-processed goods - now paired with an expanded selection of savory and specialty items that make ThoroughFare a true neighborhood provisions shop. Think artisan sourdough loaves, gourmet pastries, premium coffee, and a curated selection of foods built around the same ethos: fewer things, made extraordinarily well.

ThoroughFare brings a food culture rooted in craft and authenticity - two values that have always defined Mueller's best businesses. I'll be sharing more details on location, hours, and the full menu as they become available. Stay tuned, and in the meantime, follow them on Instagram for the latest updates.

Mueller Keeps Growing - And So Does Its Value

Every new business that opens in Mueller is more than just a convenience - it's a data point. A signal that this neighborhood continues to attract investment, creativity, and community. That matters for home values. It matters for quality of life. And it matters for anyone thinking about buying or selling here.

I've documented what makes Mueller one of Austin's most sought-after neighborhoods and what the Mueller real estate market is doing right now. If you'd like to talk about what these neighborhood developments mean for your home's value - or if you're thinking about making Mueller home - I'd love to connect.
